Let’s raise a glass for the legendary Celis!
I must start this off by thanking everyone at Celis Brewery for the amazing night of fun at their media night event on June 22nd. Beers were flowing, relationships were built and history was shared not only with great stories but with beer as well. Had the pleasure of tasting a solid line-up of beers to come. Their famous Celis White is still tasting as if Pierre was brewing it himself. Christine, Daytona and the rest of the gang have dialed this legendary recipe down! Cultivating the O.G. yeast to recreate this bright, hazy, juicy Witbier.
As I am rambling on about reviving recipes let’s welcome back the Pale Bock (pictured above) which was mind blowing! Super dank in hop aroma with mild malty backbone and esters of spices. So damn good I nearly chugged the beer before asking for another.
Had a grand tour of the amazing new brew house and met with the rest of the Celis “family” that are helping the wheels turn at the brewery. Christine even brought in some old faces that actually worked with her father during his tenure with the original brewery. From QC to filtration, bottling and canning to filling kegs of high demand products; Celis Brewery is ready to knock the ball out of the park with stellar craft beers.
They even jumped onboard of the NEIPA (New England or North East IPA) train with their own Celis Citrus Grandis IPA. The style consists of heavy late addition hops during flameout and or whirlpooling with the use of a very secret weapon that only a few select faces within the brewery has even seen… The Torpedo! This device is popular with breweries such as Sierra Nevada hence the Torpedo Pale Ale. The NEIPA style may also include a heavy dry-hop addition during the tail end of fermentation for a more aromatic character.
Christine and Daytona were kind enough to share the great news about their deal with H-E-B to get Celis Brewery beers back onto shelves exclusively. TI am very happy that the Celis White will return in its fashioned bottled format as they will also be releasing cans later this summer as well with an in-house line ready to go. Also, the announcement of the award winning, world class Grand Cru will be making its triumphant return. I failed to have asked if any barrel aging or programs were going to be put into place. There’s definitely space to make it happen! Christine and Daytona took center stage they toasted glasses high in the air to conclude the evening stating “This is not the end of it! This is just the start.”
On June 23rd, Celis Brewery had their official soft opening of their taproom doors to the public. And I must say that the turn out was more than expected! The official grand opening will be July 11th and they’re expecting a big welcome home event with live music, food and more.
